Cauliflower pasta

Ingredients
1 Onion, chopped2 tablespoons coconut oil2 cloves garlic minced1 teaspoon oregano1- 16 oz can of diced tomatoes1 small head of cauliflower1 pound of whole wheat pasta (penne or fusilli)2 tablespoons chopped Parsleysalt and pepper to taste
Directions
Bring a big pot of water to a boil (big enough for everything in the end)

In the meantime, saute the onions until translucent. Add the garlic, tomatoes, red pepper and oregano. Lower heat to a simmer for 10-15 minutes

When the water comes to a boil add pasta and cook according to Package. 5 minutes before the pasta is done add the cauliflower to the pot.

Drain cauliflower and pasta stir in the sause and add fresh parsley.
