3 sweet potatoes4oz cream cheese6 6in flour tortillas1 can enchilada sauce3/4 cup Mexican blend shredded cheeseGarlic powder, onion powder, cumin and chili powder to taste
Cook sweet potatoes in oven or microwave. Mash together with cream cheese and seasonings. wrap filling and cheese in tortillas, reserving about 1/2 cup of cheese. Place filled tortillas in a 13x9 pan and cover with enchilada sauce. Top with remaining cheese and bake at 400 degrees until cheese is brown.
