Not Quite Zero-Point Veggie Soup

1/2 cup diced onions2 garlic cloves, minced3 cups fat-free broth (beef, chicken, or vegetable if you prefer 100% vegitarian soup)2/3 cup sliced carrots2 cups diced green cabbage1/2 cup green beans1 can diced tomatoes1 tbsp. tomato paste1 tsp Mrs. Dash Garlic & Herb Seasoning1/4 tsp. salt1/2 cup diced zucchini
In a large sauce pan, saute carrots, onions and garlic over low heat with no-fat cooking spray for about 5 minutes. Add broth, cabbage, green beans, tomato paste, basil, oregano and salt, and bring to a boil. Lower the heat, cover, and simmer for around 15 minutes or until beans are tender. Stir in the zucchini and continue to heat soup for 3 - 4 minutes. If you prefer softer zucchini, you can add it earlier and adjust time accordingly.
