Lentil and Barley soup with Ham

1 cup onions, chopped1 cup celery, chopped3 cloves garlic, minced3 tbsp olive oil2 15.5 oz cans stewed tomatoes3/4 cup dry lentils, sorted and rinsed3/4 bearl barley4 cups beef or vegetable broth2 cups water2 cups thinly sliced carrots2 cups diced ham (1lb)1 tsp italian seasoningsalt and pepper to taste
Cook the onions, celery and garlic in the oil until tender. Place all ingredients into a crock pot. Cook on low around 3-4 hours. Makes approximately 12 1 cup servings.
