Black Bean Rice Soup

1/2 cup chopped onion1 clove garlic, minced2 teaspoons of olive oil1 1/2 cup low sodium beef broth1 1/2 cup water1 (15 ounce) can of black beans, rinsed and drained1 (14.5 ounce) can of diced tomatoes with juice3/4 cup uncooked instant whole grain brown rice1/3 cup salsa1 teaspoon cumin1/4 teaspoon dried oregano, crushed
Cook and stir onion and garlic in hot oil in large saucepan or Dutch oven until onion is tender. Add water, broth, beans, tomatoes with juice, rice, salsa, cumin, oregano and pepper. Bring to boil. Cover, reduce heat to low and simmer until rice is tender, about 15 minutes. Can sprinkle with chopped cilantro before serving.
