Paleo Garlic "Mayo"

Ingredients
1/2 cup coconut concentrate1/2 filtered water, warm1/4 cup extra virgin olive oil3 garlic cloves1/4 tsp salt
Directions
Place all of the ingredients in a blender and blend on high for a minute or two, until a thick sauce forms (when freshly made, it should resemble to consistency of conventional mayo). If sauce is too thick, thin with water.

Keeps well in the refrigerator but hardens. Let come to room temperature or warm to soften before using.
