KJ's Chickpea Salad

Ingredients
1 small shallot3/4 c. nonfat cottage cheese1/4 c. reduced-fat mayonnaise2 T. sour cream2 T. white-wine vinegar1/4 c. nonfat milk1 T. fresh or dried dill weed1/4 t. salt1/4 t. pepper1 15.5 oz. can chickpeas, drained and rinsed3 c. cucumber, peeled and chopped2 c. grape tomatoes, halved1/4 c. crumbled reduced-fat feta cheese1/4 c. scallions, sliced1/2 c. creamy Ranch dressing
Directions
Dressing: Combine shallot, cottage cheese, mayonnaise, sour cream and vinegar in food processor & process until smooth. Add the dill, salt & pepper. Makes one and a quarter cups.
Salad: Mix chickpeas, cucumbers, tomatoes, feta cheese and scallions Mix in the dressing and toss to coat.

Serving Size: makes six 1-cup servings
