veggieful corned beef hash

Ingredients
1 large potato, chunked1 large sweet potato, chunked10 baby carrots, quartered1 tbs olive oil1/2 large onion, sliced5 baby bella mushrooms, diced3/4 lb cooked corned beef, diced1/2 cup frozen spinachonion powder, garlic powder, sage, thyme, salt, pepper
Directions
1. bring large pot of water to a boil
2. add potatoes and carrots. boil 5 minutes.
3. meanwhile, heat olive oil in a large heavy skillet over medium heat.
4. sautee onion and mushroom until soft, about 5 minutes.
5. Drain vegetables well, and add to skillet.
6. cook until browned, trying not to stir too much.
7. add spinach. stir in and continue cooking until warm.
