Irish Bannock Bread

3/4 c. White Flour3/4 c. Spelt Flour1 1/2 tsp. Baking powder1/4 tsp. Baking Soda2 Tbs. Sugar1/4 tsp. Salt3/4 c. ButtermilkButter Flavored Cooking Spray1/4 c. Raisins ( optional)
Stir dry ingredients together. Add buttermilk all at once and mix woith a fork just until blended. Tjrn dough onto lightly floured board and knead lightly until smooth. Shape into a ball and place in a sprayed cake pan or on a sprayed cookie sheet. Flatten into a 7 inch disc. With a sharp knife, score the bread cutting down 1/4 inch deep in anout 2 inch squares. Bake at 375 degrees for about 20 minutes or until lightly browned and the loaf sounds hollow when thumped. Spray with cooking spray. Cu into 8 wedges.
