Single Serve Leftover Pork Chop Pita

2 oz - leftover pork chops cubed - (I'm sure someone could find a way to create the same thing with a raw pork chop, if leftovers aren't available)1-2 tbsp of taco seasoning (to taste)- I used Penzey's Bold Taco Seasoning for that extra kick1/4 c (or so) of water 1/2 medium Hass avocado - cubed1 oz of fresh Mozzarella - cubed1 serving of Brown Berry Pocket Thins (100 cal)
1.) cut leftover pork chop into cubes until you have 2 oz (yes, I keep a food scale in my kitchen, but this will be about 2/3rds of a bone in pork chop)
2.) Cube Avacado and Mozzarella
3.) Re-heat porkchop w/ taco seasoning on a small dry skillet over medium heat (If you are using a raw pork chop, brown and then add seasoning). Stirring often
4.) add Water as needed. Stir often until you have a saucy paste surrounding pork chop.
5.) Mix pork chop with avocado and mozzarella, letting the seasoning blend with the other ingredients. Stuff pita.
6.) Enjoy. Please enjoy. This is the most important step. All other steps are pointless if you don't stop, and just enjoy the food you are eating.
Serving Size: 1 Single Serve Pita Sandwich (with maybe a little leftover filling)
