Applesauce Cinnamon Oat Muffins

MUFFIN INGREDIENTS1.5 cups quick-cooking oats1 1/4 cups all-purpose flour1/2 cup packed brown sugar1 teaspoon baking powder3/4 teaspoon baking soda3/4 teaspoon cinnamon1/2 teaspoon salt1 cup applesauce unsweetened1/2 cup fat-free milk1 egg whiteTOPPING INGREDIENTS1/4 cup quick-cooking oats1 tablespoon brown sugar1/8 teaspoon ground cinnamon1 tablespoon butter
1. Combine quick oats (I didn't have any on hand so I used regular oats), flour, brown sugar, baking powder, baking soda, cinnamon & salt in a large bowl/sift together well.
2. Combine applesauce, milk ( I used Silk Unsweetened Vanilla Almond Milk), canola oil and egg white; mix until combined well then stir into the dry ingredients until just moistened.
3. Fill paper-line muffin tins 3/4 full
4. Combine topping ingredients and sprinkle over unbaked muffins.
5. Bake at 400 degrees 16-18 minutes or until toothpick comes out clean.
6. Coll 10 mins before removing to wire rack.
