Asian Lettuce Wraps

1/4 c. Hoisin sauce1 Tbs. soy sauce1 Tbsp. Vegetable Oil1 lb. ground chicken (turkey works, too!)2 Large carrots, peeled and finely diced1 red bell pepper, finely diced3 cloves garlic, finely chopped1 small onion, choppedsalt and pepper, to taste1/2 tsp freshly grated ginger, optional4 scallions, whites and greens separated and chopped1 large head butter lettuce, leaves washed, dried and separated
1. In a small bowl, combine the hoisin sauce, soy sauce and 1/3 cup warm water.
2. In a large skillet, heat 1 Tbs oil over medium-high heat. Add the chicken and cook, breaking it apart until brown.
3. Reduce the heat to medium, add the carrot and bell pepper for about 2 minutes, stirring. Then, add the garlic, onion, and scallion WHITES. Cook an additional minute. Season with salt, pepper, and ginger. Add in the hoisin mixture and cook until the sauce begins to thicken a bit--about a minute or two.
4. Divide the lettuce leaves among 4 plates. Serve a nice pile of the chicken of the mixture on the leaves or on the side. Sprinkle mixture with the scallion greens for garnish.
