Meatballs (for spaghetti)

Ingredients
1 pound extra lean (15%) ground beef3/4 C. skim milk1/2 C. Parmesan Cheese, grated1 sleeve Saltine Crackers (unsalted tops) = 1 C. crumbs1/2 C. egg substitute1/4 tsp. salt (low sodium)1 dash pepper1 tsp. minced garlic
Directions
Mix milk, egg substitute, Parmesan Cheese, minced garlic, salt and pepper. Blend well. Add beef and mix well; mix in cracker crumbs. Form into balls and brown in skillet until cooked through; add to sauce of choice. Simmer for about 30 minutes. Eat with pasta of your choice.
