Healthy loaded potato soup

Ingredients
7 medium potatoes, grated 1/2 cup onion, grated2 packets (1.32 oz ea.) country gravy mix, dry1 large can (48 oz) chicken broth, 99% fat freesalt and pepper to tastedash cayenne, optionaldash garlic powder, optional
Directions
Bring to a boil chicken broth and gravy mix, stirring to avoid lumps. Add grated potatoes and onions and seasonings. Reduce heat and simmer for 20-25 minutes until potatoes are desired tenderness.

If you are on a time budget, you can use pre-shredded potatoes or frozen hash browns. I like to grate them myself because it's cheaper! You can also use the low sodium broth if you are watching your sodium intake.

    Really tasty. I added 2 tbl I cant believe its not butter while cooking. I served to myself with 1 tbl light sourcream. My husband loved it with his cheese and bacon. Will make this over and over for sure - 11/20/08

    I'm not a big gravy fan, but this was very tasty. It could be called Cupboard Soup since I was looking to make dinner with what I had: boullion cubes for remainder of broth, turkey gravy paks + country, peas, carrots, onion salt since had no onions, added chicken for protein.
