Kale soup

Ingredients
1 Med Onion chopped1 Lb. Italian turkey sausage32 oz chicken broth32 oz stewed tomato1 bay leaf2 garlic cloves minced2 cups Baby Kale chopped! Tbls. Italian seasoning1 large sweet potato peeled and cube1/2 cup crumbled turkey bacon1 cup coconut milk salt and Pepper to taste
Directions
cook sausage in stock pot, drain if necessary,set aside. Saute onion in same pot till soft, add garlic saute about 2 more min. add sausage, stewed tomatoes, chicken broth, sweet potato, bay leaf, bacon. Cook on med heat till potatoes are soft - about 20 min.
Add chopped kale and coconut milk salt and pepper to taste. simmer another 30 min.
