Roasted Squash Soup - like Panera Bread

4 cups peeled and cubed1 large honey crisp apple peeled and cored1/2 large yellow onion1 Tbsp coconut oil1/2 to 1 tsp curry powder3.5 cups vegetable broth1/2 cup almond milk1 tsp saltdash of cinnamon
Roast cubbed butternut squash that has been seasoned with cinnamon and salt for 30 minutes at 415 degrees.
Meanwhile, in a large skillet over med.-high heat, salute apple and onion in coconut oil with curry powder and a few dashes of salt for about 10 minutes and until softened. Add broth, milk and squash to large skillet with the apples and onions and bring to a boil. Reduce heat and simmer uncovered for about 20 minutes. Stir in salt to taste. Use immersion blender or food processor and blend until smooth and creamy
