2 Egg Whites (Large)1 Large Egg, separated1 Cup 3 Pepper & Onion Blend2 Tbsp Cheese (your choice)
Place peppers and onions in skillet (add a tbsp of water if needed) and soften. While these cook, take 3 egg whites and whisk until fluffy. Remove peppers & onions from skillet. Spray skillet lightly with olive oil spray. Fold in egg yolk and pour into skillet. Add the 1/2 veggies back in and scramble the eggs with them. Once done, add cheese with remaining veggies on top until cheese is melted. Serve immediately.
