Oatmeal Chocolate Chip Banana Muffins

6 cups Unbleached All-Purpose Flour2 cups Old-Fashioned Rolled Oats3 tsp Baking Soda1 tsp Salt2 cups Chocolate Chips500 grams Dates1/2-1 cup Hot Water680g Bananas, mashed (about 6 small)6 Eggs, large2 1/4 cups *Salted Butter, melted1 cup Milk, 2%6 tsp Vanilla
Preheat oven to 350.
Mix all the dry ingredients and chocolate chips in a bowl. Set aside.
Create a date paste by blending the dates and hot water in a food processor. Empty into a large bowl.
Puree the bananas in the food processor and add them to the dates.
Melt butter in a saucepan and allow it to cool slightly.
Combine melted butter, milk, eggs, and vanilla with the dates and banana mixture. Mix them together with a spoon.
Add the dry ingredients and mix with a spoon until combined.
Measure 1/3 cup batter into prepared muffin tins.
Cook for 18-20minutes
This recipe makes 3 1/2 dozen regular muffins
