simple peach pancakes

2 15 oz cans of lite sliced peaches (drained) , 2 large eggs , 1/2 cup of old fashion oatmeal, 1 tsp of ground cinnamon, 2 tsp of baking soda
this is what I use as the syrup for my pancakes: ( I like to start it first)
In a medium sauce pan ,add 1 can of drained peaches and 1/4 of a tsp of cinnamon, bring to boil stirring occasionally, once it's boiling turn heat down to a simmer and cover , continue to stir occasionally and I like to kinda chop the peaches as the simmer.
Pancakes
1/2 cups of oats into blender, grind up to flour texture then add 1/4 tsp of cinnamon and 2 tsp of baking soda blend just to mix them good , then add the last can of peaches and two eggs to the blender with your dry ingredients and blend to a pancake texture
spray skillet with cooking spray or a dabb of light butter
heat skillet over medium heat pour 1/4 cup of the batter to pan let cook on one side for about 2-3 minutes or till lightly tan markings show on cooked side then flip and allow to cook for another 2-3 minutes or until lightly brown then serve with some of the peach sauce and chunks from the sauce pan in step 1 ( I use about two tsp of the sauce per pancake)
Serving Size: makes 8-10 1/4 cup servings
