Roasted Carrots and Potatoes

Ingredients
2 cups carrots, peeled and sliced into 1/2" chunks2 cups russet potatoes, diced1 T olive oilsalt and pepper to taste
Directions
Preheat the oven to 375. Prepare the vegetables. On a rimmed roasting pan, mix the vegetables with the oil, and sprinkle with salt and pepper. Roast for 30 minutes, mixing half-way through.
