Mini Rice Cakes with Red Bean Sauce

Ingredients
1 cup water1/2 cup brown rice3 egg whites1/2 cup sliced scallions1/2 cup chopped walnuts1/4 cup dry bread crumbs1/2 tsp thyme1/4 tsp basil1 tblsp olive oil1/4 chopped green pepper1 15oz can kidney beans8oz can tomato sauce1 tsp chili powder
Directions
Cook the rice in water, watch closely, it should take about 30 min. Cool while preparing other ingredients. Add scallions, walnuts, thyme, basil, bread crumbs and egg whites to rice. Mix thoroughly. Shape into 2 inch patties. Heat 1/2 inch olive oil or other oil and pan fry patties to a golden brown. Remove to paper towels and keep warm. While cooking patties, saute green pepper in olive oil in a small saucepan. Add undrained kidney beans, tomato sauce and chili powder. Mash the beans slightly while stirring and heat through. Serve the sauce over the rice cakes and a dollap of sour cream, if preferred. Enjoy!

    I'm not a huge fan of green peppers so I left them out but I liked it a lot w/o them! - 4/25/08
