Pizza adapted from Prevention's Diabetes Diet

Bread, pita, whole-wheat, 4 pita, large (6-1/2" dia) Zucchini, baby, 1 medium *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" Onions, raw, 2 slice, medium (1/8" thick) *Broccoli Slaw, 3 oz *Ragu Spaghetti Sauce (tomato sauce), 0.5 cup Ricotta Cheese, part skim milk, .33 cup *Kraft Mozzarella Finely shredded Part Skim cheese, 0.25 cup tomato
Heat pita in the oven for 5 minutes at 425. Spray non stick canola spray in pan and cook chopped veggies until soft. Mix in tomato sauce. Spread veggie mixture on pita. Dot with ricotta and sprinkle with mozzarella and chopped tomatoes. Bake at 425 for 7-10 minutes. Serves four.
