Ingredients
Lb of mild Italian sausage, removed from casingHalf a medium onion, dicedPackage of sliced mushrooms Small can of sliced black olivesSargento provalone cheese, slicedSmall can of tomato sauce5 large eggs, beatenArtichoke hearts, to taste, quartered
Directions
Sauté sausage, mushrooms and onion ( diced), until water has mostly evaporated. Layer on artichoke and olives then add eggs, well beaten. Let cook on low until eggs have set, then pour on tomato sauce and layer on cheese slices. Place under broiler for a few minutes to brown cheese. Slice and serve.
