Connie's Recreation of Creamy Limoncello from Maria's in Aruba (double batch)

Ingredients
16 - 20 ORGANIC lemons2 bottles (750ml) 100–proof vodka (or one 1500 ml large bottle)4 cups 2% milk6 cups sugar8 cups cream
Directions
Wash the lemons and pat dry. Take 4-5 of the lemons at a time and peel the zest off and place into a Mason Jar. Make sure that you do not peel off the pith or it will make your Limoncello bitter. Repeat until you have 4 Mason Jars with lemon zest. Carefully pour the vodka into the jars dividing evenly between the 4 jars. Store in a cool, dry place for 4 weeks. About once a week swirl the peels around in each jar. This is what infuses your vodka with the lemon.

NOTE: I have read that you can let the lemon infuse the vodka from just 2 weeks to 3 months, so you don't have to really get anal about how long you wait.

ABOUT FOUR WEEKS LATER:

Remove the zest peels ONLY from the jar (leaving the vodka in the jar) and place into large pot. Add 2% milk and bring to a GENTLE boil, constantly stirring. BE CARFEFUL not to bring to a rapid boil!

Remove from heat and stir in the sugar until completely dissolved. Add the cream. You can also add in a touch of vanilla (like 1/2 teaspoon or less - this is optional). Stir some more to make sure the sugar is absolutely dissolved.

Add the vodka. Stir. Remove most of the zest peels with a slotted spoon. Now you have creamy Limoncello, but you're not done YET. Place cheesecloth over the mouth of Mason Jar; then place wide mouth funnel over cheesecloth. Using a plastic measuring cup, scoop the Limoncello a little at a time and SLOWLY pour into the jar (cheesecloth will strain out any remaining zest peels).

Once you have all your Limoncello strained, pour into *bottles with a funnel. Cap and store in the freezer. Serve straight from the freezer. Depending on how cold your freezer is, you might have to let it sit out for a bit for it to pour.

*I use the Grolsch Beer bottle with the pop cap. Be sure that they are thoroughly cleaned and dry before using.
