German Apple Pancakes Gluten and Dairy Free

3 eggs1/2 cup gluten free flour blend1/2 cut almond milk (unsweetened)1 med granny smith apple sliced into segments2 TBLS coconut oil1/2 tsp cinnamon2 TBLS real Maple Syrup
Saute the cut up apple in 1 TBLS of coconut oil with the cinnamon. While the apple cooks, mix together the eggs, milk, and flour. Heat a cast iron skillet on high heat and melt the other TBLS of coconut oil in it. Pour batter into hot skillet and put directly into 425 oven for 20 to 25 minutes. continue to cook apple till nice a soft or how you like it. Serve with warm maple syrup.
