Salmon with Honey Mustard Glaze

Ingredients
1 Tbsp packed brown sugar1 Tbsp light butter1/2 Tbsp olive oil1 Tbsp honey1 Tbsp Dijon mustard1 garlic clove minced1 pound salmon fillet
Directions
Make honey mustard marinade by mixing all the ingredients except the fish. Cut the salmon into 4 (4oz.) fillets. Place salmon in shallow glass or plastic dish. Pour marinade over salmon. cover and refrigerate at least 15 minutes but no longer than 1 hour.

Heat grill for direct heat. Remove salmon from marinade; reserve marinade. Place slamon, skin side down on grill. Cover and grill for 15 minutes, brushing 2 to 3 times with marinade, until salmon flakes easily with fork. Discard any remaining marinade.

    Yummy! This has just the right amount of sweetness without being to heavy! Not oily at all. Used all olive oil instead of the light butter and olive oil combo. I portioned my fillet into 4 ind. portions, and baked it at 425F in a foil-lined pan for about 12 minutes. Tasted great!! - 5/19/10
