Carob breakfast muffins with 5 gr. carb

Ingredients
12 eggs1.75 cups coconut milk7/8 cup (14 Tbsp)coconut flour/ meal6 Tbsp. carob2-3 tsp. vanilla (optional - but good!)1 Tbsp. cinnamon (optional)1 rounded tsp. baking soda
Directions
preheat oven to 340 - 350 degrees. Beat eggs for one minute. Add coconut milk; beat again. Add coconut flour, baking soda, and carob, cinnamon & vanilla. Mix well.
Scoop into muffin tins, using parchment paper liners.
Bake 16 - 20 minutes, until top is springy but well set.
