Mini Peanut Butter Ice Cream Sandwiches

*Cream cheese, lowfat, 2 oz (softened) *confectioner sugar (1/4 cup), 1 serving *Smart Balance Omega Creamy Natural Peanut Butter, 4 tbsp Salt, 1 dash Whipped topping, frozen, low fat (like Cool Whip), 1.5 cup Nabisco Famous Chocolate Wafer Cookies-8 cookies, 3 serving
� In a medium bowl, using an electric mixer, beat together cream cheese, sugar, peanut butter and salt until smooth. Add whipped topping; beat until just combined.
� Spoon a rounded 1 1/2 tablespoons peanut butter filling on top of a wafer cookie; place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients; freeze until firm. Yields 1 ice cream sandwich per serving.
