Chicken Tikka Masala

Ingredients
2 lbs chicken breast or thighs cut into 1inch chunks1 tbsp olive oil1 white onion, chopped6 cloves garlic (or 3 tbsp minced garlic)3 tsp grated ginger root4 tsp paprika4 tsp garam masala1 tbsp salt1/4 cup tomato paste2 28oz cans of crushed tomato (can use a combo of crushed and diced, but crushed is best)1 can full fat unsweetened coconut milk
Directions
Heat oil in a skillet. Add chopped onion, tomato paste, and seasonings. Heat until fragrant and mixed.

Put chicken in a slow cooker, and pour onion/spice mix over it. Mix together. Add the crushed tomato, and mix together.

Set slow cooker on high for 4 hours, or low for 7-8 hours.

In the last 15-20 minutes, add coconut milk and mix. Leave the lid off of the slow cooker for a thicker sauce.

Serving Size: Makes approx 15 1 1/2 cup servings
