Hummus Recipe

Ingredients
1 Can (16 oz.) Chickpeas1/4 C Tahini2 Cloves Garlic1/4 C Fresh Lemon Juice1/2 tsp. Ground CuminSalt, to tasteGarnish:1-2 T Olive Oil1 tsp. Sumac Powder
Directions
Drain and rinse the chickpeas, reserving a half cup of the liquid. Place the tahini, garlic and lemon in a blender and pulse until smooth. With machine running, add the reserved chickpea liquid and chickpeas. Process until smooth. Taste and adjust seasoning with lemon juice and salt. Cover and set aside at room temperature for 60 mins. Refrigerate.

To serve, spread the hummus on a shallow platter and make a small well in the center with a spoon. Drizzle the olive oil into the well and add the sumac on top. Serve with toasted pita triangles and fresh vegetables.
