Sugar Free Cheesecake Cupcakes

Almond Crust:1 1/2 cups almond meal or almond flour3 tablespoons melted butter3 tablespoons SplendaCheesecake filling:3 - 8oz pkgs cream cheese5 eggs1 cup Splenda2 - 3 tablespoons vanilla extract
Melt butter and mix ingredients for almond crust. pat into place in foil cupcake cups.
Mix all ingredients for cheesecake filling together until smooht. Fill foil cupcake cups almost full and bake for 30 minutes at 300 degrees. Chill in refrigerator. Keeps well in frdige for at least a week. Freezes well also. Makes approximately 30 cupcakes.
Optional - use Sugar Free Vanilla Wfers or Sugar Free Shortbread Cookies for a crust on the bottom of each cupcake cup.
