Grandma Letitia Rickitts' Tea Cakes

Ingredients
1 cup butter or shortening1 cup sugar2 eggs3 cups flour1 tsp. baking powder1 tsp. baking soda1 tsp. salt1/4 cup buttermilk (or sour milk)1 tsp. lemon extract1/4 tsp. vanilla extract1/4 tsp. almond extractdash nutmeg
Directions
Cream butter and sugar (or shortening). Add eggs, buttermilk and extracts. Sift dry ingredients together and add, beating until well mixed and dough is stiff enough to roll out (add a little flour to stiffen dough if needed). Roll out dough to 1/4 inch thickness and cut out circles about 2 in. in diameter using cookie cutter or edge of a drinking glass. (Alternatively, make small balls and flatten them with your hand or the flat bottom of a drinking glass.) Place on greased cookie sheet. Bake at 450 degrees about 8 minutes.

Serving Size: Makes about 5 dozen 2-in. cookies or 4 dozen 3-inch cookies.
