Veggie Hash with Lentils

Ingredients
1 5 oz. baked potato, cubed2 oz. soy chorizo1/2 red or green bell pepper, diced1/2 orange or yellow bell pepper, diced1/2 small onion, diced1/2 cup cooked lentils
Directions
Heat non stick skillet. Saute bell peppers and onion in water 5-10 minutes until cooked as desired. Remove from pan. Add chopped, potato to hot skillet and cook until browned. Add soy chorizo to pan, brown and mix in with potato. Add cooked veggies and lentils, stir in and heat through.

Serving Size: Makes 1 hearty serving.
