Scalloped Potatoes, Vegan Crock Pot

8 c sliced potatoes (peeled, approx. 5-6 med)2 c sliced carrots (peeled, approx.2 large)3 c sliced onions (approx. 3 med)1/4 c flour1 large carton soy milk or approx. 3 1/3 c (I used Natura organic light)1/4 c Becel vegan margarineSalt and pepper
Start with a little milk then layer into crock pot; potatoes, carrots, onion, flour (scatter a spoonful on, then sprinkle milk over), margarine, salt and pepper.
Finish so that final layer is just potatoes, margarine, salt and pepper.
Cook on high 4 hours or low 7-8 hours, till potatoes are fork-tender.
