1 tbs olive oil2 cloves garlic, minced1 jalapeno, chopped1 cup quinoa (uncooked)1.5 cup water1 can black beans, rinsed (15oz)1 can fire-roasted diced tomatoes (14.5oz can)1 tsp chili powder1/2 tsp cuminJuice of 1 limeSalt and pepper to taste
Put oil, garlic and jalapeno in a large skillet and heat over medium high heat until fragrant, while stirring frequently.
Stir in remaining ingredients. Bring to a boil; cover with lid and reduce to low heat. Let simmer for about 20 minutes.
When done, can add optional avocado and shredded cheese if desired.
Serve warm
