Main dish: 10 oz. frozen corn1 can black beans (15 1/2 oz)1 can black eyed peas (15 1/2 oz)1/2 cup diced green bell pepper1/2 cup diced red bell pepper3/4 cup chopped green onion1 cup chopped white onion3/4 cup chopped celeryDressing:3/4 cup EVOO1 cup granulated sugar3/4 cup Apple Cider Vinegar
mix ingredients for the dressing in a saucepan. bring to boil while stirring frequently. when boiling remove from heat, set aside and allow to cool.
assemble the main dish ingredients in a large mixing bowl.
when dressing is cool, pour over the main dish ingredients. Allow to marinade in the refrigerator overnight.
Serve as a side dish or with tortilla chips for a snack.
