Avocado omelette (2.9 net carbs)

Ingredients
2 large eggs1 small avocado (approx 100g flesh)35g cheddar cheese, gratedKnob of butter (10g approx)Black pepper to taste
Directions
Crack the eggs in a small bowl and whisk with a folk until combined. Heat the butter in a omelette or crepes pan until melted. Pour the eggs into the pan and top with cheese and pepper.

While cooking, clean and roughly chop the avocado. Omelette should be ready in around 6 minutes (longer if you're using a small pan because the omelette will be thicker).

Just as the omelette is finished cooking, top one half of the omelette with the avocado, and then fold over the empty side, so that the avocado is completely covered.

Omelette should slide onto a plate easily, and is best when still hot. Enjoy!
