GF Lemon Bar

Ingredients
Crust1.5 cups all purpose GF flour1/2 cup granulated sugar1/4 tsp xanthan gum (if not in flour mix)1/2 cups cold butter, cut into pieces1-2 Tbsp waterFilling1.5 cups granulated sugar2 Tbsp lemon zest1/2 cup fresh lemon juice4 eggs, beaten1/4 cup all purpose GF flour2-3 Tbsp powdered sugar
Directions
Heat oven to 350. Spray bottom of 9 inch pan.
Mix all crust ingredients expcept water with pastry cutter until crumbly. At water 1 tsp at a time until forms a pressable crust.
Press into pan and bake 20 minutes.

Mix all filling ingredients except powdered sugar. Pour over hot crust and bake another 25 minutes (no jiggles). Cool completely. Sprinkle with powdered sugar. Chill. Cut into 4x4 squares. Keep referigerated.
