Cajun Chicken Pizza with white sauce

Ingredients

1/2 ranch dressing mix packet2 tbsp light sour cream3 oz. plain nonfat Greek yogurt1/2 cup skim milk1 tbsp fresh lemon juice1-2 tbsp all purpose flour1 minced garlic clove1/2 cup chopped yellow and/or red bell peppers1/4 cup chopped mushrooms1/2 cup sliced or cubed eggplant1 whole chopped Vidalia or sweet yellow onion1/4 cup chopped drained fresh tomatoes1 tbsp basil pesto3 tbsp olive oil, divided1 boneless, skinless chicken breast1 cup Mexican Four Cheeses1/4 cup mozzarella cheese12" whole wheat pizza crust
Blend together the first 7 ingredients. Cook over medium heat, stirring often, until thickened. Remove from heat. Sauce will continue to thicken as it cools.
Heat 2 tbsp of olive oil in skillet. Add peppers, onion, mushrooms and eggplant. Cook until vegetables are tender, stirring occasionally.
Meanwhile, dice chicken breast. Heat remaining olive oil in separate skillet and saute chicken until cooked through.
Toss tomatoes with pesto.
Spray pizza crust with olive oil spray. Spread white sauce over top. Cover with 3/4 of Mexican cheese. Then add cooked vegetables and chicken. Top with tomatoes, remaining Mexican cheese, Parmesan cheese, and mozzarella cheese.
Follow crust directions for baking pizza.
