LOW CARB CROCK POT THAI PEANUT CHICKEN INGREDIENTS4 boneless, skinless chicken breasts1 Jar medium salsa½ cup creamy or chunky peanut butter- no sugar added1 lime, juiced½ cup low sodium chicken broth¼ cup low sodium soy sauceChopped green onionsDry roasted peanuts for toppingFresh Cilantro if you like it
Put the chicken in the crockpot. Top with the salsa. In a bowl, mix together peanut butter, lime juice, chicken broth and soy sauce. Pour over salsa and chicken. Cook on low 3-4 hours. Serve over chopped cabbage, lettuce or other low carb vegetables. Top with peanuts, chopped green onions and cilantro (if you like).
