Black Bean Brownies

Ingredients

1 (15 1/2 oz) can black beans (rinsed and drained) (19 oz can)3 large eggs3 tbsp coconut oil4 tbsp cocoa powder (1/3 cup)1 pinch of salt1 tsp vanilla1/2 cup coconut sugar1 tsp baking powder1 tsp baking sodaOptional: dark chocolate chips, walnuts, cranberries, etc.
1. Mix wet ingredients in a blender/food processor and add dry ingredients (except chocolate chips) and puree until smooth.
2. Pour into a greased 8 x 8 cake pan.
3. Stir in some chocolate chips and nuts or leave plain.
4. Bake at 350 F for approximately 45-55 minutes ***
5. Let cool before cutting.
*** I used a glass baking dish and reduced the temperature to 325 F and baked it for 35 minutes or until a cake tester comes out clean. Very moist and delicious.
Serving Size: Makes 9 or 12 squares depending on how you cut it
