Mom's Favorite Carrot Cake

Ingredients
2 cups flour2 tsp baking soda2 tsp cinnamon 1/2 tsp salt/4 cup vegetable oil3/4 cup buttermilk2 cups sugar2 tsp vanilla8 ounce can crushed/drained pineapple2 cups grated carrots3 1/2 ounces coconut1 1/2 cup chopped walnutsFROSTING (not calculated)8 ounces cream cheese (or butter), 2-874 cups confectionary sugar, 1 tsp vanilla and milk as needed.
Directions
Sift flour, BS, cinnamon and salt. Beat 3 eggs and add oil, buttermilk, sugar and vanilla. Mix well. Add flour mixture, pineapple, carrots, coconut and nuts. Stir well. Pour into 13 x 9 pan (or two 9" rounds)
