Beef vegetable mix

1 lb beef top steak, cubed1 Tbsp coconut oil2 cloves garlic, minced1 C red onion, chopped or thin sliced1 red bell pepper sliced1 Tbsp grape seed oil1 Knorr beef bouillon cube1 large sweet potato, peeled and cubed1/2 C cubed carrots1 can butter beans2 C fresh swiss chard, dicedred pepper flakescracked black pepper1/4 C water
In a large frying pan, stir-fry top 5 items. until meat is browned. Add grape seed oil, sweet potato, and Carrots.
Continue to cook until potato and carrots start to soften.
Add butter beans and spices. Add water if it seems a bit dry. Add swiss chard in last 5 min of cooking.
Serve on it's own or over rice.
