Sausage apple and onion stuffed acorn squash

Ingredients
1 pound jimmy dean maple sausage1.5 medium granny smith apples1 large vidalia onion1 box uncle ben's long grain and wild rice6 slices cheddar cheese3 acorn squashes, halved
Directions
roast acorn squash at 425 for 30 minutes. Meanwhile, cook sausage in pan. remove, caramelized onions and apples. Cook rice. Mix all together and stuff the acorn squashes and top with one slice of cheddar cheese
