8 oz cream cheese (room temp)1 small box sugar free jello (any flavor)3 large eggs (room temp)1 packet stevia1/4 C hot water
Preheat oven to 350. Beat egg whites until stiff peaks. Dissolve jello in water and set aside. Cream the egg yolks, stevia and cream cheese and then add the jello. Blend until smooth. Fold in egg whites. Scoop by tablespoons or small cookie scoop onto parchment paper sprayed with nonstick spray and bake for about 12 minutes or until golden brown. Cool on paper for 2-3 mins and remove to rack or parchment paper to cool. Store in air tight container in the frig.
