Ingredients
this is a doubled recipe, easily halved2 cups dried lentils (makes 5 cups cooked)1 can crushed tomatoes1 cup evaporated milk2 cups water4 tbsp butter1 tsp cumin1 tsp cayennegarlicgingercilantro
Directions
boil lentils till able to be mushy (10-20min)
drain, return to pot
add tomatoes, butter, spices garlic and ginger
bring to a simmer. cover and let simmer for 30 minutes
once mixture is thick and not watery, add milk and cilantro. serve
