6 small potatoes2 soft boiled eggs2 ribs celeryA handful of chopped green onionA handful of roasted pepitasLow fat mayo
Boil potatoes for 30 minutes.
Finely chop celery.
When potatoes have cooled enough to handle, chop into bite sized pieces. Alternatively, you can chop them while still hot with the assistance of a fork.
Boil eggs to your preference.
Mix everything together in a large bowl.
Sprinkle green onion and pepitas.
Add about 4 teaspoons of low fat mayo, toss and serve.
