Salad:3 cups baby spinach, rinsed and dried2 cups fresh blackberries6 ounces crumbled feta cheese2 cups grape tomatoes, halved1 green onion, sliced1/4 cup finely chopped pecansDressing:2 tablespoons olive oil1 tablespoon balsamic vinegar1.5 tablespoons honey1 garlic clove, minced1 teaspoon Grey Poupon mustard
In a large bowl, toss together baby spinach, blackberries, crumbled feta cheese, halved grape tomatoes, chopped green onion, and finely chopped pecans.
Put the olive oil, vinegar, honey, garlic, and mustard in a jar. Shake briskly to mix. Pour over and toss the salad just before serving.
