Fruit, Nut, Seed Oatmeal Bars

Ingredients

2 cups quick oats1/2 cup nuts (sliced almonds in my case)1/2 cup dried fruit (blueberries and cranberries in my case)1/4 cup seeds (I used chia)1 tsp cinnamon1 tsp kosher salt1/2 tsp nutmeg2 extremely ripe, mashed bananas1 1/4 c milk (I used unsweetened cashew)2 tbsp honey1 tsp vanilla1 egg, beaten
1. Preheat oven to 350.
2. Mix dry ingredients.
3. In a separate bowl, mix wet ingredients.
4. Pour wet into dry. Stir.
5. Poor into a 9x9 pan that is lined with parchment paper or coated heavily with cooking spray.
6. Bake for 45 minutes.
7. Cut into 9 pieces. Serve immediately or wrap in saran wrap individually and keep in freezer. Eat straight from freezer after thawing or pop in microwave.
