Scalloped Potatoes

Ingredients
4 cups thinly sliced raw potatoes1 onion1 tablespoon chopped parsley (optional)3 tablespoons whole grain flour1/8 teaspoon pepper1 1/2 teaspoons salt3 tablespoons low cholesterol margarine1 1/2 cups skim milk (or unsweetened soy milk and vegan margarine)
Directions
1. Layer potatoes and onions in casserole, sprinkling flour between each layer.
2. Heat milk and margarine and season with salt and pepper. Pour sauce over all layers.
3. Bake 1 hour covered at 350° F. Remove cover and bake additional 30 minutes.

Makes 6 servings.

    I find it helpful to make the white sauce in the traditional fashion by melting the margerine, adding the flour, s/p then the milk, cook to thicken. Then pour it little by little as I layer the potatoes and onions. Also added lean ham (on hand). Thanks for recipe - 1/25/10

    making this right now...only I added 1/4 cup sour cream in place of 1/2 cup milk, and added a layer of very thinly sliced mizithra cheese. the best part is I get to use fresh parsley out of my garden! Smells great, can't wait to taste it. thanks for posting the recipe! - 10/10/10
